VEGETARIAN FRENCH ONION SOUP
INGREDIENTS:
- 2 OUNCES OF OLIVE OIL
- 2 SWEET ONIONS
- 1 TABLESPOON OF WORCESTERSHIRE SAUCE
- 1 TABLESPOON OF PEPPER
- 2 TABLESPOONS OF BALSAMIC VINEGAR
- 2 CUPS OF VEGAN VEGETABLE BROTH
- 1/4 CUP OF WATER
- 1 TEASPOON OF THYME
- 1 CUP OF CROUTONS
- 3 OUNCES OF SHREDDED SKIM MOZZARELLA CHEESE
- 3 SERVINGS OF FRENCHFRIED ONIONS
*USE VEGAN BROTH AND VEGAN CHEESE TO MAKE VEGAN.
DIRECTIONS:
- ADD 2 TABLESPOONS OF OLIVE OIL OVER CUT SWEET ONIONS AFTER PLACING IN A SAUCEPAN. COOK 18-22 MINUTES ON LOW HEAT MIXING OFTEN.
- NEXT, ADD VEGETABLE BROTH, WORCESTERSHIRE SAUCE, WATER, PEPPER, BALSAMIC VINEGAR, AND THYME TO ONIONS IN SAUCEPAN AND BRING TO A BOIL.
- REDUCE TO A SIMMER AND COOK FOR 5 MINUTES.
- DIVIDE INTO 3 SEPARATE BAKE SAFE BOWLS.
- TOP WITH CROUTONS, AND MOZZARELLA CHEESE AND BROIL UNTIL CHEESE START BROWNING.
- REMOVE FROM OVEN, TOP EACH WITH 2 SERVINGS OF FRENCHFRIED ONIONS.
- SERVE AND ENJOY!
MAKES 3 SOUP BOWLS.
