VEGETARIAN FRENCH ONION SOUP

INGREDIENTS:

  • 2 OUNCES OF OLIVE OIL
  • 2 SWEET ONIONS
  • 1 TABLESPOON OF WORCESTERSHIRE SAUCE
  • 1 TABLESPOON OF PEPPER
  • 2 TABLESPOONS OF BALSAMIC VINEGAR
  • 2 CUPS OF VEGAN VEGETABLE BROTH
  • 1/4 CUP OF WATER
  • 1 TEASPOON OF THYME
  • 1 CUP OF CROUTONS
  • 3 OUNCES OF SHREDDED SKIM MOZZARELLA CHEESE
  • 3 SERVINGS OF FRENCHFRIED ONIONS


*USE VEGAN BROTH AND VEGAN CHEESE TO MAKE VEGAN.

DIRECTIONS:

  1. ADD 2 TABLESPOONS OF OLIVE OIL OVER CUT SWEET ONIONS AFTER PLACING IN A SAUCEPAN. COOK 18-22 MINUTES ON LOW HEAT MIXING OFTEN.
  2. NEXT, ADD VEGETABLE BROTH, WORCESTERSHIRE SAUCE, WATER, PEPPER, BALSAMIC VINEGAR, AND THYME TO ONIONS IN SAUCEPAN AND BRING TO A BOIL.
  3. REDUCE TO A SIMMER AND COOK FOR 5 MINUTES.
  4. DIVIDE INTO 3 SEPARATE BAKE SAFE BOWLS.
  5. TOP WITH CROUTONS, AND MOZZARELLA CHEESE AND BROIL UNTIL CHEESE START BROWNING.
  6. REMOVE FROM OVEN, TOP EACH WITH 2 SERVINGS OF FRENCHFRIED ONIONS.
  7. SERVE AND ENJOY!


MAKES 3 SOUP BOWLS.
