CHICKEN AND YELLOW RICE WITH BLACK BEANS
INGREDIENTS:
- 2 SMALL CHICKEN BREAST
- 4 OUNCES OF YELLOW RICE
- 16 OUNCES OF BLACK BEANS (LOW SODIUM)
- 2 SERVINGS OF ITALIAN SEASONING
- 2 SERVINGS OF THYME
- 2 TABLESPOONS OF GARLIC POWDER
- 2 TABLESPOONS OF BALSAMIC VINEGAR
- 4 LIME WEDGES
SUBSTITUTE CHICKEN FOR PLANT BASED CHICKEN TO MAKE VEGETARIAN!
DIRECTIONS:
- COOK 2 SMALL CHICKEN BREAST AND TOP WITH VINEGAR, THYME, AND GARLIC POWDER UNTIL MEAT IS TENDER WHITE.
- HEAT YELLOW RICE TO A BOIL FOR A MINUTE THEN ALLOW TO SIMMER FOR 20 - 25 MINUTES WITH TOP ON IN A POT.
- HEAT CANNED BLACK BEANS IN SEPARATE POT ON MEDIUM HIGH 5-10 MINUTES OR WHEN BEANS ARE SOFT AND READY TO EAT.
- WHEN RICE IS READY, TOP WITH COOKED BEANS AND COOKED CHICKEN BREAST THEN SQUEEZE LIME OVER TOP.
