CHICKEN AND YELLOW RICE WITH BLACK BEANS

INGREDIENTS:

  • 2 SMALL CHICKEN BREAST
  • 4 OUNCES OF YELLOW RICE
  • 16 OUNCES OF BLACK BEANS (LOW SODIUM)
  • 2 SERVINGS OF ITALIAN SEASONING
  • 2 SERVINGS OF THYME
  • 2 TABLESPOONS OF GARLIC POWDER
  • 2 TABLESPOONS OF BALSAMIC VINEGAR
  • 4 LIME WEDGES


SUBSTITUTE CHICKEN FOR PLANT BASED CHICKEN TO MAKE VEGETARIAN!

DIRECTIONS:

  1. COOK 2 SMALL CHICKEN BREAST AND TOP WITH VINEGAR, THYME, AND GARLIC POWDER UNTIL MEAT IS TENDER WHITE.
  2. HEAT YELLOW RICE TO A BOIL FOR A MINUTE THEN ALLOW TO SIMMER FOR 20 - 25 MINUTES WITH TOP ON IN A POT.
  3. HEAT CANNED BLACK BEANS IN SEPARATE POT ON MEDIUM HIGH 5-10 MINUTES OR WHEN BEANS ARE SOFT AND READY TO EAT.
  4. WHEN RICE IS READY, TOP WITH COOKED BEANS AND COOKED CHICKEN BREAST THEN SQUEEZE LIME OVER TOP.
